Grilled Corn Salsa with peppers, cilantro & lime

  • 3-4 ears of fresh corn (yield 2 cups kernels)
  • 1 T mayonnaise
  • 2 sweet bell peppers (red and green)
  • 1/2 cup diced onion
  • 1 garlic clove, minced
  • 1 jalapeno pepper, seeded and chopped
  • 2 limes- for juice
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 2 T chopped cilantro
