The best sauces for pork are vinegar-based. Try this one that’s slightly sweetened with root beer.
Makes 3 ½ cups
Reduce:
- 2-liters of bottled root beer
Add and simmer:
- 1 ½ cups apple cider vinegar
- ½ cup ketchup
- ¼ cup yellow mustard
- 2 tbsp. fresh lemon juice
- 1 tbsp. Worcestershire sauce
- 1 tbsp. Tabasco sauce
- 1 tsp. kosher salt
- 1 tsp. fresh ground black pepper
Finish with:
- 2 tbsp. unsalted butter
Reduce the root beer to 1 cup over medium heat in a large saucepan. This may take up to an hour!!!!! The syrup should coat the back of a spoon.
Add the vinegar, ketchup, mustard, lemon juice, Worcestershire sauce, Tabasco sauce, salt and fresh ground black pepper. Stir well to combine and simmer for about 20 minutes. Finish the sauce by adding the butter.
